Pink Tie Dinner Party

Cherry Dessert Recipe
Ingredients
- Flour (1-1/2 cups)
- Packed brown sugar (1 cup)
- Instant (one minute) oatmeal (3/4 cup)
- Salt (1 tsp)
- Baking soda (1/2 tsp)
- Cherry pie filling (one 21 oz can)
- Shortening (1/2 cup)
Directions
- Preheat your oven to 350 Degrees Fahrenheit.
- Mix flour, salt, and baking soda together. Add in packed brown sugar and oatmeal before cutting in shortening. Do this until you have lumps the size of peas.
- Prepare a 9x13 inch pan for baking, but do not grease. Split the mix in two and press half onto the bottom of the pan. Spoon pie filling into the pan. Top with the unused layer of the mix and smooth over with a spoon or other utensil until level.
- Bake in the oven for 25-30 minutes. Let cool a few minutes before serving.
Blossom Cakes Recipe
Ingredients
Cupcakes
- All-purpose flour (1-3/4 cup)
- Baking powder (1-1/2 cup)
- Salt (1/2 tsp)
- Butter (1/2 cup)
- Sugar (1 cup)
- Eggs (2)
- Milk (2/3 cup)
- Honey (1/4 cup)
- Vanilla extract (1/2 tsp)
- Almond extract (1/2 tsp)
Frosting
- Mascarpone (2 cups)
- Cream cheese (1 cup)
- Cherry preserves or marmalade (2/3 cup)
- Confectioner's sugar (1/2 cup)
- Honey (2 tbsp)
- Lemon juice (1 tbsp)
Directions

- Preheat your oven to 375 Degrees Fahrenheit.
- Mix flour, baking powder, and salt together.
- In a separate container, cream sugar and butter until the mixture is light and fluffy. Then add in eggs, honey, vanilla extract, and almond extract. Beat until well blended.
- Gradually add in and mix milk and flour mixture until combined.
- Evenly pour batter into a cupcake pan prepared with muffin liners.
- Bake for approximately 20 minutes. You can test if they're done by sticking a toothpick into the center of a muffin. If the muffins have cooked thoroughly, the toothpick should be dry when removed.
- Let cool completely before applying any frosting.
Frosting
- Blend the cherry preserves to remove any clumps of fruit before adding honey and lemon juice.
- In a separate container, blend mascarpone, cream cheese, and confectioner's sugar.
- Combine mascarpone mix with preserves mix and beat until blended.
- Fill a piping bag with frosting and top cooled cupcakes.
